Smakfulle grønnsakspyd
When grilling, it's great to have lots of vegetables as a side dish. It's both filling, delicious and adds variety to the salad. In addition, it means you don't have to make bread or rice for the meal. The only "disadvantage" is that your guests will probably eat a lot more vegetables than you think. Colorful vegetables on the table are a temptation for both the eye and the palate. Norwegians eat far too much meat and it doesn't take much to make a vegetarian dish. Try it the next time you grill!
Sjampinjong polaw
Polaw is a rice casserole with vegetables where you can use all kinds of vegetables. Today I made mushroom polaw and it was really good! If you serve this with a tandoori dish and raita , the family will be happy. At least that's what happens with me. Chili in rice is very unusual for a Norwegian palate, so here you just have to adjust to your own taste. As you can see, I have both chili powder and fresh chili, which can be a bit spicy if you don't like spicy food.

As you may have understood, sandwiches are something that has been made a lot here at home. Both now and especially when the children were growing up. Simple packed lunch or delicious weekend breakfast! You can also find the recipe with potato or meat .
Salat med koriander grønnsaker
Do you have anyone in your family who refuses to eat salad, thinking it's rabbit food? My brother often says he has a deal with rabbits – they don't eat his food and he doesn't eat theirs. Many people think salad is boring and I agree if you just chop up vegetables and do nothing more. For a birthday I was served cherry tomatoes and arugula with pizza, for me it will be tame. I think it is appropriate to spice up the salad with spicy vegetables, different types of dressing, pickled chilies or a spicy chutney. Sometimes it is also good with just salt, pepper and lemon juice.
PUNJABI PAKORA KADHI
In my house, everyone is really happy with this unique Punjabi dish. Kadhi-chawal (kadhi with rice) is eaten in all states of India, but Punjabi kadhi is in a class of its own – this is not something I say because I am originally from Punjab. We often use pakoras in it which are cooked with it and become soft. In other states, including Gujrat and Maharashtra, for example, it is like a thin soup without pakoras. In consistency it is between soup and porridge, if I were to compare it to Norwegian food, it is a little more liquid than sour cream porridge. You can use the recipe fromalu ke pakore or use that recipe and skip the potatoes, but just drop the batter with a large tablespoon so that you get pakores made of pure chickpea flour and spices.
Panir spyd – Indisk ost på grillen
Panir is the famous cheese from the state of Punjab. Most people love it very much. If you don't have it , you can make it yourself or use tofu, without any comparison. This is how I make it with my tasty tandoori paste . Normally you can use any kind of marinade like for chicken, but paneer is quite tasteless and I therefore think it can be seasoned a little stronger. A little sprinkle of lime juice and you have a super tasty vegetarian variant ready. The skewer is even better with some vegetables and then the peppers are both colorful and tasty. Otherwise you can use mushrooms, squash, potatoes, broccoli etc.
