We are quite used to deep-frying in Indian cuisine, but I haven't made donuts in 30 years anyway! I got these on the wish list from my youngest daughter who can't tolerate wheat flour. From this recipe I got 13 large pieces, remember that they don't rise as much as with wheat flour, when we use chickpea flour . You can use any kind of gluten-free flour, I use Semper.
International Waffle Day is approaching (on Friday) and I have renewed myself! That is, I made an even better tasting and more colorful version than the last one , AND it went great. They are also filling, since it is Easter I have cheated a little , made them a little yellow with food coloring. A good pinch of saffron can be used if you are not disturbed by the strong flavor.
I've heard about Shrove Sunday for years. I remember my mother always supporting the Sanitetsforeningen, nice older ladies who stood around selling Shrove rice. She thought it was so nice to bring some color into the house when it was so cold and white everywhere, now I'm talking about several decades ago. Picking and decorating is done by volunteers and the collection goes to the elderly and sick. The tradition started in 1946 and annually about 7 million kroner is collected for the purpose.
As you know, pie is not something Indian and quite mild in taste for an Indian palate, especially mine which loves strong flavors. So I made a gluten-free version by spicing up a regular recipe. AND guess what, it turned out super delicious!
Roll cake is something that is quick to make, there are just a few more processes involved. I have thought about making it several times with mango cream, but only now have I had the opportunity. At the same time, I made it pure gluten-free with my wonderful chickpea flour. It doesn't turn out as fluffy as wheat flour, but it is good!
