Salad with coriander vegetables

Do you have anyone in your family who refuses to eat salad, thinking it's rabbit food? My brother often says he has a deal with rabbits – they don't eat his food and he doesn't eat theirs.

Many people think salad is boring and I agree if you just chop up vegetables and do nothing more. For a birthday I was served cherry tomatoes and arugula with pizza, for me it will be tame. I think it is appropriate to spice up the salad with spicy vegetables, different types of dressing, pickled chilies or a spicy chutney. Sometimes it is also good with just salt, pepper and lemon juice.

You can use all kinds of vegetables, I like eggplant, squash, peppers, broccoli, carrots, big slivers of red onion, mushrooms. I make a big portion for dinner as a side dish and save some for salad.

SALAD WITH CORIANDER

500 gr various vegetables

2 tablespoons coriander paste

2 -4 tablespoons light cream or oil

For salad:

A large bowl of iceberg lettuce, arugula, cucumber, cherry tomatoes.

Mix in cooled vegetables.

Dressing:

1 cup sour cream

½ teaspoon salt

1 teaspoon ground pepper

Here's how:

  • Cut vegetables into large cubes or pieces. Mix sour cream and coriander paste. If you don't want to use sour cream, it's a good idea to use a little oil so it doesn't get so dry and burnt on the grill or in the oven.
  • Grill or bake in the oven at 200 degrees for about 20 minutes.

Veggie or not, this tastes super good!
