International Waffle Day is approaching (on Friday) and I have renewed myself! That is, I made an even better tasting and more colorful version than the last one , AND it went great. They are also filling, since it is Easter I have cheated a little , made them a little yellow with food coloring. A good pinch of saffron can be used if you are not disturbed by the strong flavor.
I didn't think this could taste so good! Try it and please give me feedback.
GLUTEN-FREE EASTER WAFFLES
The recipe yields 8 waffles.
2 eggs
50 g brown sugar
100 gr chickpea flour
100 g oatmeal
½ teaspoon baking powder
2 teaspoons yellow food coloring
3 tablespoons oil
2 dl kefir (or lactose-free natural yogurt)
1-2 dl water
2 cardamom pods
Procedure:
- Whisk eggs and sugar until frothy.
- Add chickpea flour and oatmeal (50 gr can be ground into oatmeal if desired)
- Grind cardamom seeds into powder and mix with the rest of the ingredients.
- Let the batter swell for 20-30 minutes.
- Baked in a waffle iron and eaten with your favorite toppings. For me it's goat cheese and raspberry jam.... And of course delicious chai - YUM!
