Gluten-free Easter waffles

International Waffle Day is approaching (on Friday) and I have renewed myself! That is, I made an even better tasting and more colorful version than the last one , AND it went great. They are also filling, since it is Easter I have cheated a little , made them a little yellow with food coloring. A good pinch of saffron can be used if you are not disturbed by the strong flavor.

I didn't think this could taste so good! Try it and please give me feedback.

Procedure:

  • Whisk eggs and sugar until frothy.
  • Add chickpea flour and oatmeal (50 gr can be ground into oatmeal if desired)
  • Grind cardamom seeds into powder and mix with the rest of the ingredients.
  • Let the batter swell for 20-30 minutes.
  • Baked in a waffle iron and eaten with your favorite toppings. For me it's goat cheese and raspberry jam.... And of course delicious chai - YUM!

Enjoy!
