Vegetarian protein bomb

Here comes the vegetarian dish of the week. In the new year I will try to inspire you to cook more vegetarian food. I will try to post a dish every week. As you may have noticed, there has been a separate category on the menu bar called "vegetarian" at the very top of the page here. Click in and get inspired! :)

Today I want to share a recipe that may take some time, but really not that long if you do things in the right order. Mung sprout salad, 4 servings.

This is what you need:

80 gr. mung beans

50 gr. red onion

100 g tomatoes

100 gr. radish

2-3 tbsp bread cubes (if you have)

1 teaspoon salt

1 tsp chaat masala

(1 fresh chili)

½ tsp pepper

3 tablespoons lemon juice

3 tablespoons finely chopped dhaniya coriander

Procedure

  1. Soak the beans in boiling water overnight. Cover the beans with a wet cheesecloth and leave in a warm place for about a day. IMG_1487
  2. Soak with water a couple of times if the indoor air is dry. Let the beans stand for 1–2 days until they sprout. IMG_1488
  3. Cut the onion, tomatoes and radish into small cubes. Finely chop the chili and coriander.
  4. Mix all the ingredients in a bowl, add spices and lemon juice.

It couldn't be a healthier and fat-free breakfast or lunch. Very filling and a real protein bomb! You can add 2 tablespoons of water to the mung sprouts and cook for a few minutes in the microwave before adding the rest. This is definitely one of my favorites :)
