Now that the weekend is almost here and you always want something sweet and delicious, I thought I would suggest healthy, gluten-free waffles. Waffles have always been popular at our house. I made them with regular wheat flour until 8-9 years ago, when I started to become aware of using less fine flour. Different combinations have been tried, now I have found a combination that is actually very good and not least filling. Maybe this could be the weekend breakfast? Try it too :)
This is what you need:
2 eggs
80 g sugar
100 gr chickpea flour
100 g ground oatmeal (or whole groats)
100 gr gluten-free flour (or spelt, I used coarse spelt flour)
½-1 dl oil
2 dl kefir (can use natural yogurt)
2-3 dl water
1 teaspoon baking powder
1 teaspoon ground cardamom
(Chickpea flour looks like this and can be purchased at Meny, Ultra, Joker and Spar. Advertising for own products)
Make it like regular waffle batter. I ground the oatmeal in advance, so that it is more of a substitute for flour, but you can just as well use regular groats. I grind the cardamom myself, of course, using the seeds from the capsule (you can put the capsule itself in the boiling water when you are going to make chae / tea). Beat the eggs and sugar, add the rest and let it swell for approx. 20 min.
Tastes delicious with jam and brown cheese, cream and blueberries or with Brie, arugula and date chutney.
