Halloumi is a tasty cheese originally made from sheep's milk, but the one we get in the grocery stores at home is made from a mixture of cow, goat and sheep's milk. It is a firm cheese with a high melting point, so it is great for grilling. For vegetarians, it is great as it provides 20 grams of protein but unfortunately also a whopping 25 grams of fat per 100 grams you consume. Since I am a supporter of the fact that we need fat, (in fact, I start my day with a cup of boiled water with 1 tablespoon of
ghee ), I have no objections to enjoying this.

Four years ago on a trip to Stockholm, I got to taste it grilled in slices. Now I thought I would taste it with mango, which gives both sweetness and juice from the fruit. For myself, I made it with chili powder since I like a little spice in my food and for my better half, who avoids chili, a mild version. For him, I sprinkled on some fresh coriander, which both looks delicious and tastes good.

When you don't have fresh mango, you can use some mango puree.
GRILLED HALLOUMI WITH MANGO
2 slices Halloumi
2 tablespoons mango cubes
Chili powder to taste
Or fresh coriander
Procedure:
Place the slices with the desired topping on the grill and cook on one side only. It should not be left too long after grilling, as it will be a bit chewy.
