Good day! You would think summer had arrived since we are soon entering the second month of the season, but no. Rain is more appropriate in the fall, if you ask me. Luckily, you can enjoy yourself indoors and cook good food!
When I get tired of naan and other Indian breads, I also look for inspiration for other dishes. I found this focaccia recipe online here .I made two recipes and changed the original one a little. It turned out perfect when I changed the amount of water, it seemed like there was a bit too much liquid in the recipe. I used fine spelt flour and the recipe turned out as follows:
Focaccia with an Indian twist:
1 kg fine spelt flour
1 package dry yeast
1 tablespoon honey
1-2 teaspoons salt
About 7 dl lukewarm water
1 handful sun-dried tomatoes, diced
Coriander topping:
1 dl good olive oil
1 teaspoon rosemary
2-3 tablespoons coriander paste
olives to taste
Maldon salt
Procedure:
- Mix yeast, honey and a little water in a cup and let it sit for a few minutes while you weigh out and find the other ingredients. This will start the fermentation process.
- Mix flour, sun-dried tomatoes, salt and water to make a loose dough. Let rise for at least 1 hour. Place baking paper in the bottom of a deep baking pan and pour the dough over.
- Stick olives into the bread, mix oil and spices in a cup and pour over the foccacia. Cut into pieces with a pizza cutter, this will distribute the oil into the cuts.
- Sprinkle with Maldon salt and bake for 20 minutes at 220 degrees.
