Vindaloo is the strongest force in Indian cuisine. Some claim that there is something called tindaloo but I have not had it anywhere in India so where this term came from, I do not know.
How about a little twist on sausages today? When you grill, it's so common to have "waiting sausages". I usually serve them with some coriander potato salad and mango & lime chutney, so there's a little change in the taste.
My dad preferred fresh chili or my chili pickle. He actually carried fresh chili in his pocket when we visited someone who didn't serve spicy food. Then he just had to pull out his own, so that the meal was spicy enough for him! The next time he visited the same people, they made sure to have something spicy to serve with the food. In his lunch box, he actually had slices of bread with goat cheese and chili pickle!!

Now I have made a real fusion meal since I was asked to write about parmesan cheese. This is not something typical Indian, neither spaghetti nor cheese. We have paneer , but it has a completely different taste. The cheeses I got have different ripening times and taste stronger the longer they have ripened. They are made from natural ingredients and are lactose-free! Parmigiano Reggiano cheeses are produced in Northern Italy.
I thought there were few dishes with pork in Indian cuisine because there are more Muslims in India than in any other country. In 2015, the number was 180 million. Not only that, but also among meat-eating Hindus, pork is considered "unclean". In southern India, and especially Goa, you will find more dishes with pork. It's really just a matter of experimenting with Indian spices. I haven't used a lot of pork for Indian, but some for wok, grill and Christmas food.
A new variation, this time familiar Indian style with tandoori flavor. It went down very well here at home, hope you will try it and give us feedback!
