Indian scrambled eggs // Bhurji

Traditional Indian breakfast consists of parantha , chai , achaar (pickles) and chutney . In India, it is common to serve both hot food and drinks for breakfast. However, you will never be served fish or meat for breakfast, but eggs are very common. Eggs are prepared in several ways in Indian cuisine, including as an omelet with vegetables and spices.

Here is a recipe that is nutritious, tasty, healthy and very quick to make. Typically Punjabi, i.e. from North India. This is perfect for breakfast, lunch, brunch and the like.

BHURJI // INDIAN SCRUBBERED EGGS

3 servings

6 tablespoons oil

1 teaspoon cumin

75 grams onion

1 teaspoon turmeric

1 green chili/1 tsp chili powder (can be omitted)

1 teaspoon salt

1 teaspoon pepper

4 eggs

50 grams frozen peas

6 tablespoons water or milk

1 tsp garam masala

1 tbsp finely chopped coriander

Procedure:

Start with oil, cumin and onion. Fry until golden.

Then add the eggs, salt and turmeric. You can quickly stir the liquid in with the eggs and onion. IMG_1452

Stir well, until it looks like scrambled eggs. IMG_1454

Add peas.

Serve with bread, crispbread or with salad.
