Stuffed squash with lamb mince

Today's recipe is a real fusion dish. Admittedly, we make a lot of stuffed vegetables in Indian cuisine. The most popular are eggplant, peppers, okra and karela, which does not have a Norwegian name. In English it is called bitter melon with a very special taste. I served it for the first time to a Norwegian on a live broadcast on TV Norway, there were some grimaces, you can imagine. We can stuff vegetables with spice mix, fried onions or paneer , I have chosen minced meat today. Any kind of minced meat can be used, I have used lamb minced meat.

STUFFED SQUASH WITH LAMB PASTURE (For one large squash)

4 tablespoons oil

100 g onion cubes

2 cloves garlic

1 tbsp grated ginger

100 g tomato

1 teaspoon ground coriander seeds

1 teaspoon salt

1 tsp chili powder

2 tsp dried fenugreek

400 g minced meat

1 tsp garam masala

1 tablespoon fresh coriander

Procedure:

  • Rinse the squash and cut it in half, scoop out the soft flesh and fry it with the onion.
  • Add garlic and ginger, after a few minutes add tomatoes and spices. Once everything is cooked together, add ground beef and stir frequently so that the dough becomes grainy.
  • Finish with garam masala and fresh coriander.
  • Prick the squash with a fork and fill with minced meat, bake for 15 minutes at 250 degrees.
  • Serve with rice or potatoes with sesame seeds and, for example, coconut raita .
