Super easy dinner with few ingredients
Malai means curd, it is common to boil milk before using it in India. When it is boiled well for a few minutes, you get curd depending on the fat content of the milk. We got this curd as a spread on prantha or bread with sugar on it, because we didn't have jam or chocolate spread when I lived in India. To get a better taste in hot dishes, curd (without sugar) is used instead of cream. You can use whipping cream, heavy cream, lactose-free, coconut milk or water.
Eggs are like potatoes, you can use them for so many things. On the few days I don't feel like making a big dinner, ande ki bhurji (scrambled eggs in the Indian style) with chapati is a great option. Friday is World Egg Day, so this one is perfect! Here's a recipe for another super easy egg dinner that I really like. While you're cooking the eggs, you can make the sauce. It only takes 10-15 minutes.
EGG MALAI MASALA
3 tablespoons oil
150 gr onion, diced
Fresh chili to taste
1 tbsp grated ginger
2 dl cream/whole milk or water
5 boiled eggs
1 tablespoon fresh coriander
½-1 tsp garam masala
Procedure:
- Heat oil, fry the onion until it gets a little color, add fresh chili in thin rings and grated ginger.
- Add salt and liquid, cook for a few minutes until you get a slightly thick sauce.
- Add boiled eggs that have been halved. Let sit for 3-4 minutes.
- Sprinkle with garam masala and fresh coriander.
