Chai is my favorite drink, you can flavor it with all kinds of delicious spices. When making masala chai, you can grind different spices together; but sometimes it's good to have a pure taste.
Cinnamon is quite prominent in taste and you can therefore take a small piece, for example 2-3 cm, depending on how much you are going to make. Normally I make chai without sugar, but especially for cinnamon chai it is good with a little brown sugar, even though cinnamon has a hint of sweetness in it, it does not taste like that in chai. If you are not aware of all the good properties cinnamon has, take a look at previous posts.
Crushing the stick a little will make it taste better. I've shared a recipe for hot cinnamon chai before, but on hot days it can be nice to have something cooling. In my spice box, I prefer the coarse cinnamon that almost looks like bark, because it has a very strong flavor. What do you use?
CINNAMON ICE CREAM
3 dl water
2-3 cm cinnamon stick
2 teaspoons brown sugar
3-4 ice cubes
Procedure:
Crush the cinnamon stick and boil it with water, let it steep under a lid for a few minutes. Add sugar if desired. Cool and serve with some ice cubes.
Enjoy!
