Today I thought I would tempt you with a dessert. This is very good and reminds me a bit of rice porridge and rice pudding. You also pronounce ph as f . This recipe is similar to Khir , the difference is that you crush the rice before cooking and that makes a difference in taste. For this dessert you can use a cheaper type of Basmati rice , since it will be crushed. Then I have varied it by adding a couple of tablespoons of mango puree, which gives it a fresh lift.

PHIRNI

80 g Basmati rice

1.2 l whole milk

4 dl cream

1 tsp ground cardamom seeds

2 tablespoons crushed pistachio nuts

¾ tsp saffron

100-120 g sugar

Procedure:

Rinse and soak the rice (in double the amount of water) for half an hour, then roughly crush everything with a hand blender. IMG_2692

Bring milk and cream to a boil, add rice, ground cardamom and nuts. Let everything simmer for about an hour. Add saffron in the last 10 minutes, mix in the sugar. Serve chilled with a good dash of mango puree.
