Minion cake

Birthdays are always fun, and summer is a busy time for us. We wake the birthday child up with cake, a song and a gift. Then, of course, there is Indian masala chai . On weekdays, we sometimes have to get up at 6:30 to make it, and believe me, it's definitely worth it. When the kids were little, I thought it was fun to have a new cake as a surprise, but over time it's nice to make whatever the birthday child wants.

This year, Minion cake was on my wish list for my 15-year-old daughter's birthday. 15 years (!) since I had a baby in the house, it doesn't feel that long ago, and how quickly time flies.. Now on to the cake. Now it must be said that I love cakes and coffee, so I baked my usual chocolate cake. I reduced the sugar by one cup, so that it wouldn't be too sweet. I mixed the icing with cream and used it as a filling, before covering the cake with colored marzipan. I bought black and silver colors at Cacas in Kongensgate, the rest was regular food coloring.


Minion cake

1 bixit biscuit

3 milk roll rings

800 g marzipan

Pastry color:

Yellow, turquoise, black and silver

Chocolate cake base:

5 eggs

4 cups sugar

250 gr rapeseed oil

5 teaspoons baking powder

1 slab of dark cooking chocolate

6 cups flour

2 cups milk

Glaze:

300 g icing sugar

100 g soft butter

1 egg

2 teaspoons vanilla sugar

2 tablespoons coffee

3 dl cream, whipped to a cream consistency

Procedure:

  • Beat eggs and sugar until fluffy. Melt the chocolate in hot milk, cool and mix everything well. Bake in a greased baking pan at 200 degrees for 20 minutes.
  • Whip the cream until stiff. Whisk the ingredients for the glaze. Mix well.

Garnish:

Cut the cake in all the corners so that you get soft curves at the edges. Divide the cake in half and fill in the filling, leaving a little bit for the top so that the marzipan can be held in place. I made a turquoise stripe first, the rest will be yellow.

A thick black stripe under the eye. I used black marzipan to cut out thin strands of hair and make the mouth. You could also use licorice lace. I made the eye with Bixit biscuits spread with thick icing. The ring around the eye is made of marzipan, brushed with silver paint.

This was hugely popular and a lot of fun! By the way, I got a lot of help from the birthday child with decorations etc. So then we did something nice together.
