Mango ice cream cake with dark chocolate

I am a June baby and had a birthday earlier in the month. For this day I wanted to make something new. Everyone at my place loves Daimkake and I therefore used the family as a test rabbit for this delicious treat that will definitely be made again!

Daim chocolate is quite sweet so I chose dark chocolate instead. You can try fresh raspberries or other slightly tart berries as a nice combination with the mango ice cream. I only chose chocolate as a garnish so as not to try too many new flavors at once. Have a nice summer!

MANGO CAKE

Bottom:

4 egg whites

150 gr ground almonds

150 g icing sugar

Top :

6 dl heavy cream

4 tablespoons sugar

4 egg yolks

400 gr mango puree

200 g dark chocolate

Procedure:

  • Crush almonds in a food processor. Beat egg whites until white foam. Mix in powdered sugar and almonds carefully with a spatula. Bake for about an hour at 150 degrees, then cool.
  • Beat cream and sugar. Mix in mango puree, then egg yolks. Chop chocolate into small pieces and mix in, save a few squares for topping, they can be grated.
  • Pour over the almond base and place in the freezer overnight. IMG_3823
