Ingredient with multiple uses

Good morning everyone! SO nice to see that the previous post was very popular. We got a new record for the number of visitors during these two days. Today comes the recipe for a very popular dessert. Khir is a rice pudding and has many of the same ingredients as the traditional Norwegian rice pudding, but tastes very different. This is a dessert that is eaten across large parts of India. I mainly write a lot about North Indian food from the capital and Punjab, because I have roots there. Maybe this could be the weekend treat? Or do you want to make something new for Mother's Day? Or maybe you can surprise your loved one with Indian on Valentine's Day?

Khir//Rice pudding

This is what you need for 8 servings:

50 gr. basmati rice

2 dl water

1 liter of milk

3 dl heavy cream

4–5 choti elaichi green cardamom pods or 1 teaspoon cardamom powder

7–8 scalded almonds – or chopped pistachios

100 g sugar

Procedure

  1. Open the cardamom pods and let them cook until the dessert is done. Remove before serving.
  2. Boil rice and water. When the water is almost dry, add milk, cream and cardamom pods. Let this cook on medium heat until it thickens, which will take about 60 minutes.
  3. Mix in the sugar while it is hot, it does not need to boil. Cool, place in a serving bowl and garnish with scalded almonds and/or chopped pistachios.

As a flavor change, you can replace green cardamom capsules with 2 black cardamom capsules.
