Like everything else, you need variety with vegetarian flavors. This can be fried as meatballs, made into bread and sliced up for toppings, or made into a burger with delicious seeds either mixed in or grated on the outside.
If you are tired of rice and bread, couscous is an alternative. I like coriander potatoes , mashed potatoes with flavor or potatoes with sesame seeds . For sauce, I can suggest raita , a dressing with light cream and date chutney or paprika sauce .
VEGETARIAN BURGER
50 gr soy minced meat
50 g zucchini
50 g carrot
30 g mushrooms
50 g fresh spinach
30 g paprika
40 g eggplant
1 tbsp grated ginger
2 teaspoons ground coriander seeds
1 tsp garam masala
½ tsp chili powder (mine is hot)
3 tablespoons of fiber husk
3 tablespoons finely chopped fresh coriander
Sunflower seeds, flax seeds or other seeds
Procedure:
- Soak dried soy minced meat. Grate squash and carrot.
- Cut the other vegetables into small cubes, mix in the spices.
- Squeeze the water out of the minced meat and add the fiber husk as a binding agent.
- Mix everything and pour into a greased loaf pan, sprinkle with seeds and bake in the oven at 175 ° for about 15 minutes.
