"What do you eat on Christmas Eve, Niru?" I've been asked this question for as long as I can remember, it always comes up in conversation with both old and new acquaintances. In fact, I eat all the usual side dishes, but try to make myself a different "main course".
This year I have my mom visiting and she is vegetarian, allergic to nuts, gluten and milk is also not possible. So it will be a bit limited, but it is not a problem for me since I use such things at work :) Last year I made vegetarian burgers from potatoes and red beans. This year I have tested out this "roast", my mom actually doesn't like soy minced meat much either so I am very excited to see what she says. I have already tasted it and am simply very satisfied :)
This is what you need:
50 gr soy minced meat
50 g zucchini
50 g carrot
30 g mushrooms
50 g fresh spinach
30 g paprika
40 g eggplant
1 tbsp grated ginger
2 teaspoons ground coriander seeds
1 tsp garam masala
½ tsp chili powder (mine is hot)
3 tablespoons of fiber husk
3 tablespoons finely chopped fresh coriander
Sunflower seeds or other seeds/nuts to taste


Procedure:
- Soak dried soy minced meat (online store). Grate squash and carrot.
- Cut the other vegetables into small cubes, mix in the spices.
- Squeeze the water out of the minced meat and add the fiber husk as a binder.
- Mix everything and pour into a greased loaf pan, sprinkle with seeds and bake in the oven at 175 ° for about 15 minutes.
