Soy, peas and mushroom

In the East, soybeans and soy products are widely used. The best way is to soak soybeans and grind them yourself. All lentils and beans are rich in protein, but soybeans are known to be especially rich in protein - 35.9 grams of protein and 15.7 grams of fiber per 100 grams of beans.

If you are using dried soy mash (available at immigrant stores such as Soya Crunch), rinse it well and soak it for 10 minutes so that it swells. Discard the water and use the soaked soy as ground meat for lasagna, pizza and other dishes. You can also get frozen soy ground meat at health food stores.

SOY, PEAS AND MUSHROOMS

6 tablespoons oil

5 tablespoons cinnamon stick

4 cloves

2 cardamom pods

100 g red onion

100 g tomatoes

1 teaspoon turmeric

1 teaspoon salt

1 tsp chili powder

1 fresh chili

100 g soy

1 teaspoon ground coriander seeds

1 teaspoon ground cumin

1 teaspoon dried mint

1 teaspoon ground nutmeg

100 g peas

100 g mushrooms

3 tablespoons fresh coriander

Procedure:

  • Heat oil, add cinnamon stick, cloves and cardamom pods that have been opened (no need to crush). Let them fry in oil for ½ minute. Add onion in small cubes.
  • Fry the onion until it changes color slightly, add crushed tomatoes, spices and chili in thin strips.

  • Let everything cook for 3-4 minutes until you get a smooth sauce, add the soaked and rinsed soy. Cook for 5 minutes. Add the rest of the spices and add the mushrooms and peas. Mix everything and cook for 10 minutes. Finish with fresh coriander.
