This is a filling salad for lunch or as a side dish to fried chicken or fish. As a variation, you can also mix leftover fried chicken or fish into the salad. You can add vegetables and salad as desired and what you have in the fridge. It's fun to take different things each time so you don't always have the same flavors. Use what you like.
Salad with coriander and pasta
100 gr oat pasta
1½ tbsp coriander paste
½ iceberg lettuce
small red onion
2 tomatoes
4-5 radishes
½ bell pepper
½ cucumber
1 avocado
some sugar snap peas
Arugula or other vegetables to taste
Procedure :
Cook the pasta for 6 minutes with a little salt. Drain the water and mix in the coriander paste. Rinse the vegetables well and cut into pieces. Mix everything together in a bowl. The salad is so tasty that you don't really need any dressing, but if you want a little more flavor, add 2 tablespoons of light sour cream and mix well. Dig in!
