Rice, mushrooms and coriander

In Indian cuisine, it is common to eat rice with either daal or a side dish, preferably vegetarian. It could be, for example, the one I posted a few days ago or jeera alu . Since I like to experiment a bit in the kitchen, I tried out a new dish. Using basmati rice of course. Here you have a good vegetarian dish, as much as a side dish!

This is what you need:

2 tablespoons coriander paste

100 g mushrooms

2 dl basmati rice

4 dl water

optionally a little salt to taste

Procedure: Rinse rice and soak in double the amount of water. Clean and cut mushrooms into slices, fry these 2-3 in coriander paste, add the water that the rice was soaked in. Bring to a boil and add rice. Stir only once. When the water is about to boil, turn the heat down to the second lowest and let it simmer with the lid on for 6-7 minutes. IMG_4417
