I'm back after a refreshing week in Abu Dhabi, most people have heard of Dubai. Abu Dhabi is located 160 km south of Dubai and is definitely recommended, both in terms of climate, shopping, beautiful beaches, Ferrari World, attractions and a food mecca. Since my sister-in-law lives there, there was no need to think about booking a hotel etc., but since the krone is so low there was nothing much to gain from shopping there.. That's where I saved that money, hehe. The last trip was 10 years ago, so it was not possible to go on a sand safari, dinner at the Burj Al Arab etc. A day in Dubai was enough for us, since we have seen and done a lot there before.
Of course I took the opportunity to visit restaurants with Indian food. I import and sell quality spices myself so the spice souk in Dubai was not attractive. We chose the seight-seeing bus, which was a new offer since we were last there and it was relatively disappointing. Conversations with other travelers gave the same impression, the arrangement was characterized by childhood illnesses, routes that did not work, poor signage, etc. So it is not recommended!
The opportunity to buy fresh jackfruit outside of India was one of the highlights. I chose a 3 kilo and below is the result. For those of you who don't know jackfruit, (kathal in Hindi) which unfortunately has no Norwegian name, it is a vegetable that is a very good substitute for meat. Today it is widely cultivated in tropical regions of the Indian subcontinent, Thailand, Malaysia, Indonesia and Brazil. The tree grows best in tropical humid and rainy climates, and not cold conditions.

You can use the vegetable on the grill as a substitute for pulled pork or cook it with Indian spices as I have done. I froze what I had extra and served it with fresh roti , but it goes well with naan or with vegetables and raita . The tricky thing with this one is dividing, the skin is very hard. You need a very GOOD knife, it should be greased with oil and is basically like a pineapple. Take about 2 cm of the skin, remove the center stem.
The recipe is from my mother-in-law with a little adjustment…. I can’t help myself! I haven’t made it without frying it first, which is recommended for a gourmet taste. Then I take my time with it
KATHAL KI SABJI :
1 dl oil
2 teaspoons cumin
200 gr onions in bunches
750 gr jackfruit
2 cloves garlic
3 tablespoons grated ginger
300 g tomatoes
salt and chili to taste
1 teaspoon turmeric
2 dl water
1 tsp garam masala
4 tablespoons lemon juice
4 tablespoons fresh coriander
Procedure:
- Clean, slice and fry jack-fruit
- Heat oil, add cumin and shredded onion.
- Fry the onion until it changes color, add the garlic and ginger.
- Add tomatoes and spices. When everything is well mixed, add water.
- Cook under a lid, it takes 20-25 minutes on high heat.
- Finish by adding lemon juice and delicious fresh coriander.
