Paneer sandwich // Sunday brunch

Here's a treat that can be used as a snack or packed lunch that will make your colleagues or friends jealous. It both smells and tastes delicious!

Paneer is the wonderful Indian cheese that you can easily make yourself. You can find other deliciouspaneer dishes too, but this one is super easy (if I can use the expression as a vegetarian?). The difference in this recipe is that I have made the paneer without pressing it into pieces, i.e. just let the water drain well and press with your hands. Remember that you can save the water for different types of dough or liquid in soups and curries, because it is very nutritious. It is also possible to make paneer from lactose-free milk and yogurt.

CHEESE SANDWICH

1 l whole milk

½ l kefir or 4-5 tbsp lemon juice

1 tablespoon oil

1 tbsp Nirus curry paste (own advertising)

150 diced tomatoes

½ bell pepper, diced

100 g onion cubes

3 tablespoons finely chopped fresh coriander

2 slices of bread per person

Procedure:

  • Bring the milk to a boil and add the kefir or lemon juice. Let the mixture separate over low heat.
  • Strain through cheesecloth and squeeze out the liquid with your hands.
  • Heat oil and curry paste, add paneer, tomato, bell pepper and onion.
  • Let everything fry for about 8-10 minutes and finish with fresh coriander.
  • Mix well and refrigerate. Place 2 tablespoons between two slices of bread and place in the sandwich/toast iron for a couple of minutes (butter is not necessary).
Served with one of my authentic chutneys or with salad and mango lassi.
