Oven-baked coriander potatoes

Potatoes are not just a children's favorite. In India, potatoes are eaten almost daily and more than in Norway! Not only because there are more Indians than Norwegians but because there are so many dishes and variations of this delicacy. Not least, there are a higher number of vegetarians.

I'm a fan of eating varied and healthy. What is healthy? It's up to each person, but I'm not a fan of various diets. Especially ones like the low-carb diet, for example. Glad that its short popularity has faded!

What is unhealthy is that you eat too much, everything is healthy if eaten in moderation. Instead, use proper ghee , dairy butter, cream and exercise more. You have probably heard the usual tips to take the stairs instead of the elevator, etc. The problem with obesity today is caused by us using our bodies too little and eating more than we need. In India, it is said that we should eat to live, not live to eat . So I eat with a clear conscience :) On to the recipe - here is a good twist on regular potato boats.

Coriander potatoes

1 tbsp coriander paste

400 gr new potatoes

Procedure:

If I have new potatoes, I usually don't peel them. If necessary, adjust the cooking time to the type of potato you are using. Rinse the potatoes well and cut into large chunks, mix in a tablespoon of coriander paste. Extra oil is not necessary. Place in an ovenproof dish and cook for 20 minutes at 225 degrees in the oven. Turn after 10 minutes.
