Basmati rice is one of the best Indian rices available, and it is extra long-grained. Warning: Once you have tasted it, you will be hooked! In India, rice is not used as a substitute for potatoes, potatoes are seen as a vegetable and people often eat rice and potatoes together. The rice is often served on a plate and should not be sticky, but fluffy and long-grained.
It is very aromatic and becomes even longer when cooked. The rice is also healthier than round-grain rice because rice has a higher glycemic index the longer it is cooked. At the same time, it does not need to be cooked as long as thick rice . When we also soak it, it becomes soft and is ready faster. Remember that rice should always be cooked with the lid on so that the good aroma and nutrients evaporate. My grandmother always used a kitchen towel between the pot and the lid to retain the aroma and steam in the pot, but with good pots and a suitable lid, this is no longer necessary.

MATAR POLAW // Rice with peas
4 tablespoons ghee or 8 tablespoons oil
1 bay leaf
3 cm cinnamon stick
1 black cardamom pod
1 teaspoon cumin
100 g onion
200 gr frozen peas
1 teaspoon salt
1 tsp garam masala
4 dl basmati rice
8 dl water

Procedure:
- rinse the rice a couple of times and soak it in double the amount of water. Open the cardamom pod and cut the onion into thin strips.
- Heat ghee/oil, add spices and onion. Fry the onion until it changes color.
- Add the water the rice has been soaked in and bring to a boil. Add the peas, salt, garam masala and rice. Use medium heat until the water boils and then turn the heat down to the lowest heat. Let stand for 5-8 minutes with the lid on.
