The magic of spices

Hi hi! Hope the sun is shining for you today too. It's so lovely with brighter days and such wonderful Easter weather! Now I can show you what I've been working on. Namely a refresh of the blog. So nice with the new design :) What do you think?

Today I thought I would inspire you with yet another colorful and tasty dish that will make anyone curious. Plus, it's one of my favorites! As I've mentioned before, Indian cuisine is the best vegetarian cuisine in the world.

This is what you need for 4-6 servings:

7 tablespoons oil

1½ tsp cumin

150 gr onion, sliced

200 g tomatoes

1½ tsp turmeric

2 teaspoons salt

1 tsp chili powder

500 g squash

1 red bell pepper

Optionally 1 – 2 dl water

1½ tsp garam masala

2 tablespoons fresh chopped coriander

Procedure:

  1. Cut the squash lengthwise into two or four pieces depending on its thickness. Cut into slices (max ½ cm thick). Heat oil, add cumin and onion in strips.
  2. When the onion is slightly golden, add the tomatoes. Cook for 1 minute and add the spices.

  5. Cook until the oil floats. Add the squash, parika and water, cook until tender. Add the garam masala, mix well and sprinkle with delicious fresh coriander as a garnish. Serve with roti or rice.
