Lentil cookies // Vegan Christmas food

Indian cuisine is full of lentils and beans and we can make lentil cakes with different flavors. Last year I made a vegetarian Christmas roast , this year I have to change the menu. Then I came up with these delicacies, they are tasty and high in protein.

Of course, they can be used for all kinds of occasions, I can also recommend them as a vegetarian burger in gluten-free hamburger buns.

If you are in a hurry, you can use pre-cooked lentils and beans. Since I use a pressure cooker, I can roughly halve the cooking time and prefer to cook myself. In my cookbook "Indian food in Norwegian dishes", you will find a table with cooking times in different cookware and other useful information.

As a sauce for these, I can recommend Nirus paprika sauce with or without chili.

LENTIL COOKIES (8 pcs)

300 gr cooked red beans

100 g onion cubes

50 g grated carrot

50 g paprika

1 teaspoon thyme seeds

1 teaspoon salt

1 tsp chili powder

1 tsp garam masala

2 tablespoons ground oatmeal

2 tablespoons fresh coriander

A little rapeseed oil for frying

Procedure:

  • Cut the onion and bell pepper into small cubes, grate the carrots coarsely.
  • Mash the beans, mix everything and leave to cool for ½ hour.
  • Shape into cakes and bake in a frying pan

Tastes good with grated Asian radish and beetroot soaked in lemon juice
