Incredible, but true, soup can be made from anything. The trick is to have enough flavor and richness so that you feel full. I have an Indian pressure cooker so it can be made in about 10 minutes! The advantage is that I can take coarse pieces of the vegetables, whole cloves of garlic and fresh chili .
CARROT AND SWEET POTATO SOUP
2 tablespoons butter
50 g onion cubes
1 clove garlic
1 fresh chili
150 g sweet potato
150 g carrot
4 dl water
1 teaspoon salt
½ tsp ground pepper
½ cup cream if desired
Thin slices of leek or other as garnish
Procedure:
- Heat oil, fry onion cubes until they get some color.
- Add garlic clove and fresh chili.
- Continue with sweet potato, carrots and water.
- When the vegetables are tender, puree with a hand blender, add salt, pepper and cream.
- Bring to a boil and serve immediately with delicious, crispy papadams .
Those who must have meat can, for example, have crispy bacon or a few tablespoons of fried ground beef as a garnish. I think there is a lot of flavor in leeks and use them. Of course, the chili is optional, but I think the sweet potatoes in Norway are quite sweet and with carrots it makes a contrast with the chili. For me, the soup is too sweet without pepper and chili.
