Rain or shine, grill season or not - summer is wonderful! This dish can't be called Indian potato salad, fusion potato salad is perhaps more appropriate. When I have visitors from India, this is served with great success both with grill and Indian tapas, which you can find here and here . I have to encourage a little the other way too, you know.... :)
I don't think I know anyone who doesn't like or eat potatoes. In India, we eat more potatoes than Norwegians, not only because there are naturally more Indians, but also because it is used as a vegetable and not as a substitute for rice .
This is what you need:
½ cup Creme Fraiche
3-4 boiled new potatoes
50 g diced red onion
2 tablespoons mayonnaise
½ tablespoon strong mustard
¾ tsp salt
¾ tsp ground pepper
1 tablespoon soy sauce
1 tsp chili powder
2 cloves grated garlic
1 tbsp vinegar/lemon juice
1 good teaspoon date chutney
2 tablespoons fresh coriander
Procedure:
Boil potatoes with a little salt in the water, then they won't break. Cut potatoes into large cubes, preferably with the skin on. Mix everything in a bowl and let soak for ½ hour.
For variety, you can add different vegetables or one at a time. Remember to increase the amount of spices if you add more vegetables at once:
1 fresh chili in thin rings.
10 cm celery stalk, diced.
2-3 tablespoons corn.
2-3 fresh radishes, diced.
1/3 bell pepper in small cubes.
5-6 mushrooms fried/grilled in butter
