Potato burger // Alu ki tikki

Tikki; means round, a potato burger that is fried in a frying pan. Served with several types of chutney and eaten with a spoon. It can be made without bread slices (I do) but the bread slices make the tikki more crispy. The recipe makes eight pieces.

Alu Ki Tikki // Potato Burger :

500 gr. boiled potatoes

1 teaspoon salt

1 tsp chili powder

1 tsp garam masala

2 tsp amchur dried mango powder

1 tsp dried methi fenugreek

2–3 tablespoons finely chopped coriander

(4 slices of bread without crust)

6–8 tablespoons oil for frying


Procedure:

  1. Grate the potatoes. Soak the bread slices in 2 cups of water, squeeze out all the water. Mix the potatoes, bread slices and all the spices.
  2. Divide into 8 pieces and shape them into hamburger patties. Heat 2 tablespoons of oil and fry 3–4 at a time over medium heat. When the tikki has a nice brown crust, turn and fry the other side.

Serve immediately with date chutney. Of course you can use other chutneys, but date chutney is a classic and almost a must like cranberry jam for brown sauce.

Niru's tips

Tikki can also be deep fried, but you have to put the bread slices in otherwise it will crumble. Try tikki in hamburger buns with lettuce, onions, tomatoes and raita mix as a dressing.
