I think frozen spinach is so good, you can use a little or a lot at a time without it spoiling in the fridge. I use it often and in different ways. Here is another South Indian inspired dish with mustard seeds and curry leaves. If you don't have these spices, you can order them in the online store or skip them altogether. Of course, it will change the taste a lot. Each spice has a unique taste and only a small amount will add flavor and that is the charm of Indian food that the flavors vary from state to state.
In Punjab, spinach is widely eaten without anything in it and preferably with cornmeal roti.
SPINACH WITH SCAMPI
4 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin
10 curry leaves
2 cloves garlic
2 tablespoons grated ginger
200 g crushed tomato
1 tablespoon tomato paste
1.5 teaspoons salt
1.5 tsp chili powder
600 frozen spinach
300 g cooked scampi
Procedure:
- Heat oil, add mustard seeds, cumin and curry leaves.
- Quickly add the grated garlic and ginger. Mix well and add the tomatoes and tomato paste.
- Add spices and spinach. Cook everything for 7-8 minutes.
- Add the cooked scampi and let them cook for 3-4 minutes.
