It's so cool to serve food on skewers, I think it's also practical. You don't have to present the food in different bowls and it looks quite delicious if you put together a few different colors. It is said in India that you eat twice as much with your eyes as with your mouth, so the food should be inviting and colorful in addition to the six flavors .
The skewers are suitable both as a snack and tapas for large or small occasions. Scampi absorbs flavor very quickly, which means they don't need to be marinated for long. The combination with mango gives a very exciting flavor combination, here it is better with a slightly sour mango. If you finish with a cherry tomato, it becomes a slightly juicy side dish and you hardly need dressing.
I usually start by soaking the skewers in water before I start marinating etc. If you have forgotten to do so and the grill is hot, you can also brush them with oil.
SCAMPI BARBECUE SKEWERS
3 tbsp Nirus date chutney
½ tbsp grated ginger
½ teaspoon salt
1 tsp chili flakes
400 gr large cleaned scampi
1 mango, diced into large cubes
Cherry tomatoes
Procedure:
- Mix together the scampi, date chutney, grated ginger, salt and chilli flakes.
- While the scampi is in the marinade, peel the mango, remove the stone and cut into large cubes.
- Three scampi, mango cubes every other time and finish with a cherry tomato.
