Indian cuisine is a hybrid, not only do you find variety in meat, fish, rice dishes, breads and chutneys, but also a very large selection in lentils and beans. Several people have expressed a desire to learn more about these protein "bombs" and I am happy to contribute. Unfortunately, many have removed these from their diet, because they contain carbohydrates, but note; They are slow carbohydrates, which are the opposite of fast carbohydrates in flour and sugar. Lentils and beans contain several minerals and nutrients in addition to protein, well worth including in the diet. They are filling, have low fat, provide a low glycemic index (GI) and cleanse the blood. Among the benefits can be mentioned iron, folate, phosphorus, calcium, iodine, magnesium, sodium. In addition, most have a lot of vitamins A, C, PP, E and B1, B2, B6. The only disadvantages I can think of are long cooking time and gas formation in the intestines, depending on which type you choose. When you soak them, use a pressure cooker and magical Indian spices, these problems are gone. Since they have a more filling effect than other foods, they can have a slimming effect. So guys, there is every reason to increase your intake! But, how do most people ask? Using them in chickpea salad is quite common now. They MUST be cooked or sprouted, ankurit mung salad, before use and not eaten as is.

For a detailed overview of cooking times in a pressure cooker or regular kettle etc. I can refer to my cookbook " Indian food on a Norwegian plate " .
