Today I have a super easy addition to my mango mania - my favorite category! Vegan mango ice cream made with only three, yes three , ingredients! I don't need to mention that this is self-promotion, as I always use mango puree from my own food series? I'll mention it anyway, for the record.
The recipe was actually made by the youngest girl, 16, who is actively involved in the family business. My 3 children are lactose intolerant and the youngest also cannot tolerate wheat flour, so together we like to try dishes without these ingredients. This one is super delicious and super easy, no gluten or eggs and you can make it with coconut milk if there are guests who don't want milk protein. Fermented milk from soy or oats can also be used. For non-allergic people, use regular yogurt or natural cottage cheese. Could it be easier?
VEGAN MANGO ICE CREAM
½ l soy yogurt
½ l mango puree
Various nut mixes
Optional currants/currants

Procedure:
- Mix yogurt and mango puree.
- Chop nuts and, if desired, juice.
- Place the nuts in the bottom of a round cake pan and pour the mixture over.
- Place in the freezer overnight or until everything has hardened.
Garnish with mango puree on top or fresh fruit and nuts.
