Mango muffins

Now May 17th is fast approaching and the party season is in full swing! There are not least many red days that give plenty of time for both good food, long dinners or small getaways. I thought I would inspire with a dessert that is possible to make gluten- and lactose-free. MANGO MUFFINS that are perfect for this summer season we are entering - YUM !

MANGO MUFFINS:

3 eggs

3 tablespoons sugar

50 grams (dairy-free) butter or neutral oil

2 dl mango puree

A few tablespoons of water

1 teaspoon vanilla sugar

2 teaspoons baking powder

3 dl sifted gluten-free flour

Whisk eggs and sugar until stiff, add all liquid ingredients and sift flour. Stir gently with a spatula. Bake for 5-10 minutes at 180 degrees in the middle of the oven. You will get about 15 large muffins from the recipe.

Mango frosting:

1 cup butter (dairy-free)

1 cup mango puree

4-5 cups powdered sugar

Mix butter and mango puree. Add powdered sugar a little at a time, until you get a thick frosting.

Make holes in the muffin and fill with the desired amount of mango puree.

Here you can either cut the muffin straight off and spread the frosting on it.

If the frosting is too thin, add more powdered sugar (a little at a time). If the frosting is too thick, add more mango puree. Sprinkle with coconut or dark chocolate and serve! Hope you like it :)
