Thought I'd share my second suggestion for an Indian tapas menu. You can find the first suggestion here. Serve with papadams and raita .
Niru's coriander and Tuna salad
2 cans tuna in water
6 tablespoons sour cream
50 grams red onion
2 tbsp Nirus coriander paste
Procedure:
Mix everything in a bowl, garnish with some fresh shredded coriander and diced red onion.
Chickpeas in coriander casserole
400 gr cooked chickpeas
1 tbsp coriander paste
2 tablespoons light sour cream or Creme Fraiche
Procedure:
Mix the pasta and sour cream in a saucepan, add the chickpeas and possibly a couple of tablespoons of water.
Let everything sit for a few minutes, it tastes good both warm and cold.
Tandoori potatoes
3 large potatoes
3 tbsp Nirus Tandoori paste
A little fresh coriander
Procedure:
Cut thin slices of potatoes, marinate with 1 tablespoon of paste per potato.
Place on baking paper and bake in the oven for 10 minutes at 250 gr.
Squeeze a few drops of lemon and fresh coriander before serving.
Scampi skewer
2 tablespoons coriander paste
4 tablespoons light sour cream
500 gr raw scampi
3 cherry tomatoes per skewer
Procedure:
Soak skewers for 30 minutes. Marinate scampi for about 30 minutes in a mixture of pasta and sour cream. Thread onto skewers and roast for 10 minutes in the middle of the oven at 225 degrees.
If you need a drink, a mango shake or maybe a mango mojito would be good for the evening?
