Hi! Today I'm in a fusion mood again, pork is on the wish list from the pod and something that is rarely used in northern India. You can indeed find dishes with pork in western India, or rather in beautiful Goa which is India's answer to the south. It was on the west/south coast that Vasco Da Gama set foot (and thought he had reached Australia!). Incidentally, it was the Portuguese who brought chili with them, I have heard. Thus the vindaalo strength arose.
SWEET-SOUR MARINADE
1/2 lime
75 g date chutney
3/4 teaspoon salt
3/4 teaspoon turmeric
3/4 tsp chili powder
2 small cloves garlic
2 tsp grated ginger
500 gr shredded pork
Procedure :
Mix all the ingredients and marinate the meat for at least an hour. Bake in the oven at 250 degrees for 8-10 minutes, preferably with the grill function.
Sprinkle with some fresh coriander if desired.
Well, this quick snack is far from vindaalo, more sour-sweet in taste. It cannot be said enough that you can make it as spicy as you want, but the feedback at home is that this change is good.
