Sandwiches are a good example of old-fashioned fusion food. With England as a colonial power, the natives learned to bake bread and biscuits for their new countrymen. Breakfast with stuffed prantha among Indians + loaf for the English = sandwich with filling. When the English were in India, they left behind several such habits.
You can try my favorite vegetarian sandwich with potatoes , other fillings you like, leftovers from dinner etc. I used this simple but tasty filling. Can be made with or without cheese.
CURRY SANDWICH
400 g minced meat
2 tablespoons curry paste
1 bell pepper
Some mushrooms or other desirable vegetables
a sprinkle of fresh coriander
12 semi-coarse or fine slices of bread
Cheese slices if desired
Procedure:
– Fry the minced meat with paste in a hot frying pan, add diced bell pepper and sliced mushrooms.
– Finish with fresh shredded coriander towards the end.
– Cool the filling and place a generous amount of filling between two slices of bread, place in a hot toaster.
– Tastes delicious with raita mix as a dip or sour cream mixed with mango chutney
