Plum season is at its best and it's lovely to be able to go out and pick some as they are being eaten. Even though it's a small tree, it's hard to eat it all and nice to share with friends and family.
Here is a dish that was very exciting due to the combination of salty, sour, spicy and sweet. According to Ayurveda, these are some of the key flavors for achieving balance in our physiology. I hope this will appeal to your taste and tempt you to repeat it!
Norwegian plums with pork and Indian flavor
250 g plums
1 teaspoon sugar
1 tablespoon water
500 gr shredded pork
2/3 tsp salt
2/3 tsp turmeric
1 tsp chili powder
2 cloves grated garlic
2 tsp grated ginger
1/2 lime
Procedure:
Boil plums, a little sugar and water for 5 min. on high heat. Cool, remove the skin and core from the plums. Add sugar and crush everything with a fork.
Marinate the meat in plum puree and all the spices. Bake in the oven under the grill at 225 degrees for 10 minutes. Serve with tandoori mashed potatoes, for example.

Tandoori mashed potatoes
2 tablespoons ghee
1½ tbsp tandoori paste
250 g boiled potatoes
1 dl whole milk
a pinch of salt
Procedure:
Heat ghee, add tandoori paste. Mix well. Add boiled potatoes. Mash the potatoes while adding milk a little at a time. Season with salt.
