Chickpea kebab

Here comes more vegetarian inspiration. As I always say, you'll be surprised at how easy it is! So get started. Now you can use canned chickpeas, just so you can see that it's quick and that vegetarian isn't boring at all. It's also filling!

These can be shaped into buns and fried in a lot of oil or just on the frying pan as vegetarian buns. I have shaped them slightly oblong and can be used in gluten-free hamburger bread, sausage bread or lomp with coriander potato salad, for example.

CHICKEN KEBAB

250 g chickpeas

25 g boiled potato

25 g onion cubes

1 tablespoon chickpea flour

3/4 teaspoon salt

½ tsp chili powder

½ teaspoon ground coriander seeds

½ teaspoon ground cumin

½ tsp crushed garlic

1 tsp grated ginger

1 tsp lemon juice

1 tablespoon fresh coriander

1-2 tbsp oil

Procedure:

Mash chickpeas and potatoes, add diced onions and the rest of the ingredients. Shape into hamburgers or sausages and fry in a frying pan or on a wooden grill stick for roasting in the oven or grill. I have roasted in the oven, it is not necessary but you can brush lightly with oil so that it does not look so dry, or mix 1-2 tablespoons when you mash everything.

Salad:

Grate two carrots and ½ Asian radish. Squeeze ½ lime and add a little salt and pepper.

Dressing:

2 dl light sour cream

1 tablespoon mango and lime chutney
