Christmas quesadilla

December is busy! Two advent calendars have been made for the girls. The eldest is 24 and has outgrown it, in recent years he has rather had a massage after the exam. Sensible and useful!

I'm on schedule with freshly washed windows, Christmas curtains are hung, 3 types of cakes are finished baking (with very good helpers). The most important Christmas gifts are in the box, boring, but they are mostly gift cards and cash gifts.

Now all that's left is the Christmas tree, Christmas wreath, Christmas cards, some small gifts, grocery shopping and a proper car wash. I think I started early, but the days are flying by so sometimes I need an easy solution. This one was a hit and will probably be made several more times this Christmas.

Rib Roll Quesedilla

2 tortillas per person

3 rib roll

Some spinach leaves

Red onion in rings

½ – 1 tbsp grated parmesan

Nirus Mango chutney or Date chutney

Procedure:

Heat the tortilla on one side, add the rib roll, add spinach leaves and red onion rings. Add grated parmesan. Place the other tortilla on top and flip it over. Let the other side get hot so the cheese melts.

Cut into suitable triangles and brush on some chutney before serving. Done in 1-2-3!
