Chinese food is very popular in India, but like in all countries, the chefs put their own touch on the foreign food. So it is called Indo-chinese cuisine. Last fall I was on a girls' trip to Riga with my friends and my sister, when we were going to eat we unexpectedly ended up at an Asian restaurant called Gan Bei. I can definitely recommend this one, we were there twice in three and a half days. After tasting the food, we went over to greet the chef and of course he was an Indian, I could almost guess it from the taste!
I call this chili chili chicken because it is very spicy. First I marinated the chicken in my curry paste and then covered it in hot red chilies. You can certainly make it medium, but then it can't really be called chili chicken. Remember that Chinese food is cooked on high heat and preferably in a wok or frying pan. It is tempting to make extra of this dish, but I find it tastes best and is most crispy when eaten right away.
CHILI CHICKEN (3 servings):
450 gr chicken fillet
2 tablespoons cornstarch
1 tablespoon rice flour
1 tablespoon lemon juice
1 tbsp Nirus curry paste
3 tablespoons fresh coriander
Rapeseed oil for frying
2 tablespoons oil
2 cloves grated garlic
1 tbsp grated ginger
1 small red onion
1 bell pepper
2 fresh chilies
2-3 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons water
2 tbsp Nirus date chutney
salt to taste
1 teaspoon ground pepper
3 teaspoons sesame seeds
3 spring onions

Procedure:
- Cut the chicken fillet into finger-length pieces on the diagonal. Mix the chicken pieces, cornstarch, rice flour, lemon juice, curry paste and fresh coriander. Let stand for 15 minutes.
- Fry the chicken in hot oil.
- Cut the onion and bell pepper into large cubes.
- Heat oil, add grated garlic and ginger. Quickly add diced onion and bell pepper. Fry for 5 minutes.
- Add the fried chicken pieces, soy sauce and cornstarch mixed with water (as a thin thickener).
- After a few minutes, add the date chutney , salt and pepper. Finish with sesame seeds and spring onion rings.
Serve immediately!

If you replace chicken with paneer , you get chili paneer and a vegetarian version. Good luck!
