Lucia Day is a lovely day, I am moved when I see pictures from when the children were in kindergarten. Unfortunately, you don't really notice that day after the children are out of primary school. Now only the little cats are the reminder for me.
This year I have made a recipe for healthy lussekatter. It is possible to use other gluten-free flours, but I have used chickpea flour and semper fin. They are therefore gluten-free. It would be completely wrong for me to use turmeric in lussekatter. To get real flavor, of course saffron is used and I have used a teaspoon. Since both chickpea flours are coarser, a little more sugar is needed to make it taste sweet, otherwise I think it might remind me of scones.
This is what you need:
100 gr chickpea flour
100 gr always fine
70 g sugar
2 teaspoons yeast
1 teaspoon sugar
2 tablespoons of fiber husk
1 dl water or milk
½ cup oil or butter
1 teaspoon saffron
Raisins to taste
Procedure:
- Mix yeast and 1 teaspoon sugar in a little water and let stand for a few minutes.
- Mix saffron in water or milk. Place all ingredients in a bowl and mix together to form a dough and leave in a warm place for 1 hour.
- Shape into loaves and let rise for 30 minutes.
- Brush with milk and bake at 200 ° for 12 min.
