The great thing about pie is that you can fill it with different things and get different flavors. Here is a stronger flavor with my curry paste as a flavoring. Make it with optional vegetables/meat or with soy minced meat .
Pie crust:
100 gr chickpea flour
100 g amaranth flour
1 tbsp fiber husk
70 g oil
1-2 tablespoons water
Fill:
1 tbsp curry paste
200 g minced meat
Vegetables as desired
1 teaspoon salt
3 eggs
2½ dl milk
100 g yellow cheese (can be omitted)
Procedure:
- Make pie dough and let it stand for half an hour.
- Fry ground beef with curry paste.
- Pre-bake the pie crust for 10 minutes at 200 degrees. Remember to prick it with a fork when you put it in the oven.
- Whisk eggs and milk with salt. Fill with minced meat, vegetables and pour over the egg mixture. Finish with grated cheese if desired and bake at 180 degrees for 25 minutes or until the egg mixture is firm.
- Served with a delicious fresh salad and, for example, mango and lime chutney – YUM

Amaranth is a seed with a high content of protein and dietary fiber. The seeds contain, among other things, calcium, magnesium, iron and zinc. Amaranth flour can be used for bread, cakes, pancakes, biscuits and waffles. When it comes to baking bread, it is recommended to use 25-30 percent amaranth flour, otherwise you will have problems with the rising. The flour is also a good gluten-free binder in soups, sauces and in vegetable dishes.
