Gluten- and egg-free apple cake

Apple cake with or without ice cream is a hit no matter the season, but it's especially good in the fall. At least if you're lucky enough to have an apple tree in your garden!

Here is a gluten-free version, you can of course use regular wheat flour. I used 200 grams of gluten-free fine wheat flour and 50 grams of chickpea flour. A traditional recipe is to take equal amounts of butter, wheat flour and sugar! I have started baking all cakes with less sugar than what is written in the recipes, including my own It's going great!

This is what you need:

150 gr room temperature butter

150 g sugar

250 gr flour of your choice

½ teaspoon baking powder

3 apples in boats

2 tablespoons brown sugar

1 tablespoon ground cinnamon

10-15 coarsely chopped almonds

Procedure:

  • Peel the apples, cut into thin slices and sprinkle with sugar and cinnamon.
  • Beat butter and sugar until slightly fluffy. Add flour and baking powder. Mix well.
  • Pour the mixture into a greased tin, garnish with apple wedges and chopped almonds.
  • Bake for 25 minutes at 180 degrees. Serve with or without ice cream and a delicious cup of coffee.
