Sweet pancakes with molasses and spelt

Pancakes are easy to make and not just a favorite among Norwegians, but I think among all peoples. In Indian cuisine we find many variations of these treats.

When I was little, it was popular to get these in your lunchbox. You can use other types of flour and it's easy to adjust the consistency so that you get a pancake batter. If you don't have molasses , you can use brown sugar.

What's special here is that they are eggless and spiced, you know, we Indians almost HAVE to sneak spices into everything. That's the secret behind the great flavors that I say, the magic lies in the spices – hence Masalamagic .

Sweet pancakes made from spelt flour

200 gr fine spelt flour

50 g molasses

2 dl hot water

1 teaspoon coarsely ground fennel seeds

A little oil for brushing

Procedure:

  • Mix molasses in warm water, so that the lumps dissolve. Mix everything quickly with a whisk and let the mixture swell for 10-15 minutes.
  • Brush the frying pan with a little oil and fry like pancakes.

NOTE! Should be eaten immediately, if left out too long they will become crispy. Can also be eaten with cream, jam or a chutney of your choice.
