Mango ice cream with cinnamon almonds

Like many others, I am excited about anything that can be made quickly and at the same time tastes good.
There are lots of cookies and rice pudding at Christmas, but I love ice cream too. Here is a great dessert that can be used during the Christmas holidays. Normally I would have used mango puree over the ice cream, but since I had such good roasted almonds , I tried them and we think it was very good! :)
Try it if you want a variation - it can be made vegan or with eggs and cream. Here I share both recipes.

VEGAN MANGOIS WITH CINNAMON ALMONDS

1 can of mango puree
2 cans coconut milk

Procedure:

Whisk together mango puree and coconut milk. Place in the freezer overnight.
Serve with a good sprinkling of roasted almonds with cinnamon.

MANGO WITH CREAM

6 dl heavy cream 4 tbsp sugar
4 egg yolks
400 gr mango puree

Procedure:

Whip the cream with sugar, mix in one egg yolk at a time and finally the mango puree.
Freeze overnight and serve with a good sprinkling of roasted almonds with cinnamon.

Note: the ice cream thaws very quickly and should be eaten immediately.
