As you know, mango is one of my favorites, and here is a recipe you can really enjoy!
Shrikhand is a dessert from the state of Maharashtra, but also very popular in Gujrat. The name means nectar of the gods and in addition to freshly ground butter, this was one of the favorites of the god of love Krishna . It can be made with or without mango, but then more icing sugar is needed, depending on how sweet you want the dessert. For a more sour taste, you can use natural yogurt or Turkish yogurt, but I find it works great with kefir.
It is normal to use charoli nuts, chironji, but these are not so easily available here at home and other nuts such as pistachios, almonds and cashews are often used. In both states, the dessert is served with the main course in a bowl on a thali and you can eat it with pori (fried festive bread) for breakfast.
Mango shrikhand
1 liter of kefir
50 g icing sugar
200 g mango puree (own advertisement)
6 cardamom capsules
5 tablespoons pistachios
2 good pinches of saffron
Pour the kefir into a cheesecloth and let it hang overnight so that all the liquid drains out and you have a thick mass of soured milk. If you don't have a suitable place in the kitchen, you can do it on the edge of a saucepan as shown below.
Beat the kefir mass with powdered sugar vigorously with a whisk for 4-5 minutes. Crush the nuts and grind the cardamom seeds. Mix in the mango puree, nuts, cardamom and saffron, but save some for decoration. Beat well for a few minutes and refrigerate for a few hours, preferably overnight.
Serve either in small glasses, dessert bowls or in a large bowl.
