Cheesecake is just so delicious, it's egg-free and it's very quick to make. I, who love mango, have now tried making this delicacy! Guess if it tasted good? Actually too good! I can't make it too often, otherwise I'll eat way too much...
You can use gelatin if you like, but I used agar agar, which is a plant-based starch. The powder is lightly heated with mango puree for a couple of minutes, cooled and mixed with the other ingredients.
Mango cheesecake
200 grams digestive/bixit biscuits
70 grams rapeseed oil
1 Philadelphia cheese
3 dl cream
400 g mango puree
4 teaspoons agar agar or 4 gelatin plates
50 g icing sugar
1 cup light sour cream
Procedure:
- Crush biscuits and mix with oil and place in bottom of cake tin. Heat agar agar for a couple of minutes in mango puree and cool. If you prefer gelatin sheets, follow the instructions on the package.
- Whip the cream and mix everything together. You can use other types of (allergy-friendly) products here. Pour over the base and refrigerate until the next day. Garnish with mango pieces or other berries before serving.
